Spicy Peanut Chicken

2 Chicken Breasts (bite size portions)
2 Tbs Peanut Oil

MARINADE:

3 Tbs Soy Sauce
2 Tbs Peanut Oil
2 tsp Ginger (Minced)

SAUCE

8 Tbs Peanut Butter (Chunky Style)
1.5 Tbs Brown Sugar
1.5 Tbs Tbs Soy Sauce
2 tsp Ginger (Minced)
2 tsp Garlic Chili Paste

GARNISH

3 Green Onions

Mix marinade and add chicken pieces.
Marinate chicken for 20-30 minutes.
Heat wok to high heat.
Add 2 Tbs Peanut Oil.
Stir-Fry chicken until cooked tender, 2-3 minutes.
Add Sauce.
Mix thoroughly with chicken.
Remove from wok.
Garnish with green onions & peanuts.

Serve over Chinese noodles.
